Crush or finely chop the garlic. Halve the carrot lengthwise, then thinly slice on an angle. Thinly slice the cabbage. Trim the stems from the snow peas, removing the strings from one side. Thinly slice the spring onion.
Step 2 — Make sauce
Combine the stir-fry sauce, chilli paste, garlic, 80ml (⅓ cup) water, 3 tsp soy sauce, 1 tsp white vinegar and a pinch of sugar in a bowl.
Step 3 — Cook dumplings
Heat 1 tbs oil in a medium deep frypan over medium-high heat. Cook the dumplings, without turning, for 2-3 mins until golden on one side. Carefully add 60ml (¼ cup) water (take extra care adding water to the hot pan as the oil can spit and the steam created is very hot). Cover and steam for 3 mins or until the dumplings are tender. Remove from the pan.
Step 4 — Stir-fry vegetables
Heat 2 tsp oil in the same pan over high heat. Stir-fry the carrot for 2 mins. Add the cabbage and snow peas and stir-fry for 2-3 mins until slightly charred.
Step 5 — Finish stir-fry
Return the dumplings to the pan. Add the sauce and cook, tossing, for 1-2 mins until the sauce is slightly reduced and the dumplings and vegetables are coated.
Step 6 — Get ready to serve
Coarsely chop the peanuts. Divide the dumpling stir-fry among bowls. Scatter with the spring onion and peanuts to serve.
