Preheat the oven to 180C, fan-forced. Line an oven tray with baking paper. Halve the zucchini lengthwise, then thinly slice on an angle. Peel the pumpkin and cut into 3cm chunks. Finely chop the onion. Crush or finely chop the garlic. Finely chop the parsley, including the stems.
Step 2 — Bake zucchini
Put the zucchini on the lined tray, drizzle with 2 tsp olive oil, scatter with a pinch of chilli flakes*, if using, and season with salt and pepper. Bake for 12 mins or until just tender.
Step 3 — Cook pumpkin
While the zucchini is baking, heat 1 tbs olive oil in a medium deep frypan over medium-high heat. Add the pumpkin, onion, garlic and Italian seasoning and cook, stirring, for 1 min or until fragrant. Reduce the heat to low, cover and cook, stirring occasionally, for 10-12 mins until the pumpkin is very tender.
Step 4 — Cook ravioli
Meanwhile, bring a large saucepan of salted water to the boil for the ravioli. Once the zucchini and pumpkin have cooked for 10 mins, add the ravioli to the pan of boiling water and cook for 3 mins or until al dente. Reserve 125ml (½ cup) cooking water, then drain.
Step 5 — Make pumpkin sauce
Mash the pumpkin mixture until almost smooth. Add the reserved cooking water and half the parsley, season with salt and pepper and bring to the boil.
Step 6 — Get ready to serve
Scatter the capers and remaining parsley over the zucchini, then drizzle with ½ tsp red wine vinegar. Add the ravioli to the pumpkin sauce and gently toss to coat (handle the ravioli with care to ensure they don't break). Divide the ravioli and pumpkin sauce among bowls. Top with the chilli zucchini and crumble over the feta to serve.
