Ingredients
2pcs potato
1pcs carrot
1pcs onion
1bunch thyme
15g rich gravy powder
300g free-range chicken breast fillet
1pcs baby broccoli
30ml olive oil
180ml (¾ cup) boiling water
5ml wholegrain mustard
10ml honey
5ml balsamic vinegar
Method
Step 1 — Prep and roast wedges
Preheat the oven to 220C, fan-forced. Line an oven tray with baking paper. Cut the unpeeled potatoes into 1cm-thick wedges. Quarter the carrot lengthwise, then halve widthwise. Put the potato and carrot on the lined tray, drizzle with 1 tbs olive oil, season with salt and pepper and toss to coat. Roast for 20-25 mins until golden and tender.
Step 2 — Prep ingredients
Meanwhile, thinly slice the onion. Strip the thyme leaves, discarding the tough stems. Crumble gravy powder into a heatproof jug, add 180ml (¾ cup) boiling water, 1 tsp wholegrain mustard and 2 tsp honey and stir to dissolve. Bring a medium saucepan of water to the boil for the baby broccoli.
Step 3 — Prep and brown chicken
Put the chicken flat on a board, put your hand on top and halve horizontally into fillets. Heat 1 tbs olive oil in a medium deep frypan over high heat. Lightly season the chicken with salt and pepper. Cook the chicken for 2 mins each side or until golden (the chicken won't be cooked through). Remove from the pan, leaving the oil in the pan.
Step 4 — Start gravy
Reduce the heat to medium. Add the onion and thyme to the same pan and cook, stirring, for 5 mins or until softened. Gradually add the gravy mixture, stirring constantly to prevent lumps forming. Bring to a simmer.
Step 5 — Finish chicken and gravy
Add the chicken and any resting juices to the gravy. Reduce the heat to low and cook, turning the chicken halfway, for 4-5 mins until the gravy is thickened and the chicken is cooked through. Stir in 1 tsp balsamic vinegar.
Step 6 — Cook baby broccoli
While the chicken is cooking, trim the baby broccoli and halve any larger stems lengthwise. Cook the baby broccoli in the pan of boiling water for 2-3 mins until just tender. Drain. Divide the chicken, wedges and baby broccoli among plates. Spoon over the gravy to serve.
