Ingredients

  • 2clov garlic
  • 300g chat potatoes
  • 1head broccoli
  • 1pcs spring onion
  • 10g Balinese seasoning
  • 40g peanut butter
  • 300g chicken tenderloins
  • 15ml vegetable oil
  • 5ml soy sauce
  • 10ml honey

Method

  1. Step 1 — Prep ingredients
    Preheat the oven to 220C, fan-forced. Line an oven tray with baking paper. Crush or finely chop the garlic. Thinly slice the unpeeled potatoes. Cut the broccoli stem into 1cm chunks, then cut the head into small florets. Thinly slice the spring onion.
  2. Step 2 — Roast vegetables
    Put the potato and broccoli on the lined tray, drizzle with 2 tsp vegetable oil and season with salt and pepper. Roast on the upper oven shelf for 15 mins or until the vegetables are almost tender.
  3. Step 3 — Marinate chicken
    Meanwhile, combine the garlic, Balinese seasoning, peanut butter (see Kitchen 101), 2 tsp vegetable oil, 1 tsp soy sauce, 2 tsp honey and 1 tbs hot water in a large bowl and season with pepper. Add the chicken and turn to coat.
  4. Step 4 — Bake chicken
    Push the broccoli towards the edges of the tray. Put the chicken on top of the potato. Bake for a further 10-12 mins until the chicken is cooked through and the vegetables are tender.
  5. Step 5 — Serve up
    Scatter the spring onion over the chicken and vegetables and serve at the table for everyone to help themselves. Enjoy!

    Peanut butter can firm up upon sitting, so give it a good mix to soften.
