Ingredients

  • 1pcs carrot
  • 1bunch mint
  • 20g roasted peanuts
  • 60g satay sauce
  • 150g vermicelli noodles
  • 40ml sweet chilli sauce
  • 2pcs beef rump steaks
  • 60g rice paper variety pack
  • 50g mixed salad leaves
  • 8ml soy sauce
  • 10ml vegetable oil

Method

  1. Step 1 — Prep ingredients
    Bring a medium saucepan of water to the boil for the noodles. Shred the carrot using a julienne peeler or coarsely grate with a box grater. Pick the mint leaves. Finely chop the peanuts. For the dipping sauce, combine the peanuts, satay sauce, ½ tsp soy sauce and 2 tbs water in a small frypan over high heat. Cook, stirring, for 2 mins or until hot. Remove pan from heat.
  2. Step 2 — Cook noodles
    Cook the noodles in the pan of boiling water for 7-8 mins until tender. Drain, then rinse under cold water to prevent the noodles from sticking. Return the noodles to the pan, add the sweet chilli sauce and toss to coat.
  3. Step 3 — Cook steaks
    Meanwhile, combine 2 tsp vegetable oil and 1 tsp soy sauce in a large bowl. Add the steaks and turn to coat. Heat a medium frypan over high heat until hot (see Kitchen 101). Reduce the heat to medium-high and cook the steaks for 2-3 mins each side for medium-rare, or until cooked to your liking. Remove from the pan and rest for 3 mins. Thinly slice the steaks.
  4. Step 4 — Assemble rolls
    Dip 1 sheet of rice paper in a shallow dish of lukewarm water for 20-30 secs until soft and pliable, then lay flat on a board. Add some noodles, salad leaves, carrot, steak and mint towards the bottom half of the rice paper. Fold the bottom of the rice paper over the filling and tuck it in tightly, then roll up firmly (see Kitchen 101). Repeat to make 12 rolls.
  5. Step 5 — Serve up
    Heat the dipping sauce over low heat, stirring, for 1 min or until warm. Divide the rice paper rolls among plates. Serve with the dipping sauce and any remaining filling ingredients. To make it more fun, take the fillings, rice paper sheets and bowls of warm water to the table and let everyone assemble their own rolls. Enjoy!
  6. Step 6 — Kitchen 101
    It's important to have the pan very hot before adding the beef, otherwise it may stew slightly and become tough. To ensure tender beef, slice the steak against the grain. ~ Cover the finished rice paper rolls with a wet tea towel or damp paper towel. This will prevent the rice paper from drying out and splitting.
