Peel the potatoes, then cut into 3cm chunks. Put in a medium saucepan of cold salted water and bring to the boil. Reduce the heat to medium and cook for 12-14 mins until tender. Drain, then return to the pan. Mash the potato until smooth. Add 2 tbs milk and 10g butter, season with salt and pepper and stir to combine (see Make it herby). Cover to keep warm.
Step 2 — Shape meatballs
Meanwhile, crumble 1 stock cube* into a heatproof jug, add 250ml (1 cup) boiling water and stir to dissolve. Put the plant-based mince and half the barbecue seasoning* in a large bowl and season with salt and pepper. Using damp hands, combine well, then shape into walnut-sized balls and put on a tray. Scatter 1 tbs plain flour over the meatballs, then gently roll to coat.
Step 3 — Cook meatballs
Melt 10g butter in a medium frypan over medium-high heat. Cook the meatballs, turning, for 8 mins or until browned and cooked through. Remove from the pan and cover to keep warm.
Step 4 — Make chutney gravy
Combine the stock and tomato chutney in the same pan and bring to the boil. Reduce the heat to medium and cook, stirring occasionally, for 6 mins or until thickened. Taste, then season with salt and pepper. Add the meatballs and any resting juices and turn to coat in the gravy. Remove the pan from the heat.
Step 5 — Cook peas and serve up
While the gravy is cooking, bring a small saucepan of water to the boil. Add the peas and cook for 2 mins or until tender. Drain. Divide the mashed potato, meatballs and gravy and peas among plates and enjoy!
Step 6 — Make it herby
If you have some on hand, stir finely chopped herbs such as chives, parsley or dill into the mashed potato for an easy flavour boost.
