Preheat oven to 220C, fan-forced. Line 2 large oven trays with baking paper. Pat the pork belly dry with paper towel (see Cooking tip). Rub with 2 tsp olive oil and season generously with salt. Put the pork, skin-side up, on a lined tray and roast for 40 mins or until skin starts to blister. Reduce heat to 180C and roast for a further 25 mins or until cooked through. Rest for 10 mins.
Step 2 — Prep ingredients
Meanwhile, cut the unpeeled potatoes into 3cm chunks. Coarsely chop the broccoli stem, then cut the head into small florets. Quarter the carrot lengthwise, then cut into 4cm lengths. Peel and core the apple, then coarsely chop. To make the stock, put half the country seasoning* in a heatproof jug, add 160ml (⅔ cup) boiling water and stir to dissolve.
Step 3 — Roast veggies
Put the potato, carrot, broccoli stems and 1 tbs olive oil in a bowl, season with salt and pepper and toss to combine. Transfer to the remaining lined tray, reserving bowl. Roast for 30 mins or until almost tender. Put the broccoli florets in reserved bowl and toss to coat in remaining oil. Add to the tray of veggies and roast for a further 10 mins or until tender.
Step 4 — Make apple sauce
While the veggies are roasting, put the apple, 10g butter, 1 tsp sugar and 125ml (½ cup) water in a small saucepan over medium heat. Cook, covered, stirring occasionally, for 10-12 mins until the apple breaks down. Cook, uncovered, for a further 2-3 mins until slightly reduced. Season with pepper. Remove from the pan (see Make it yours) and clean the pan.
Step 5 — Make gravy
Melt 10g butter in the same pan over medium heat. Add 2 tsp plain flour and cook, stirring, for 2 mins or until golden. Gradually add the stock, stirring constantly to prevent lumps forming. Bring to a simmer and cook, stirring, for 2 mins or until thickened. Remove from heat. Slice the pork. Divide the pork, roast veggies, apple sauce and gravy among plates and enjoy!
Step 6 — Make it yours
The apple sauce can be served warm or at room temperature. If you want to warm it up, reheat it in the microwave or in a small saucepan, covered, over low heat just before serving.
