Check your avocado is ripe before starting this recipe (see cooking tip). Pick the coriander leaves and finely chop the stems. Finely chop the capsicum and tomato.
Step 2 — Cook rice
Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to the boil. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins.
Step 3 — Make salsa
Meanwhile, combine 1 tbs white wine vinegar and 2 tsp sugar in a large bowl and season with salt and pepper. Add the capsicum and tomato and toss to combine.
Step 4 — Heat pulled pork
Put the pulled pork and half the Tex-Mex seasoning in a small frypan over medium heat. Cook, stirring occasionally, for 5 mins or until hot.
Step 5 — Make coriander rice
Stir the coriander stems into the rice and season with salt and pepper.
Step 6 — Slice avocado and serve
Thinly slice the avocado. Divide the coriander rice, pork mixture, salsa and sliced avocado among bowls. Scatter over the coriander leaves and remaining Tex-Mex seasoning to serve.
