Ingredients

  • 2pcs potato
  • 1pcs carrot
  • 5g country seasoning
  • 1pcs granny smith apple
  • 200g pulled pork
  • 2pcs white bread rolls
  • 50g mixed salad leaves
  • 15ml olive oil
  • 10ml sugar
  • 15ml white wine vinegar
  • 5ml extra virgin olive oil

Method

  1. Step 1 — Bake chips
    Preheat the oven to 220C, fan-forced. Line a large oven tray with baking paper. Cut the unpeeled potatoes and carrot into 1.5cm-thick chips. Put the potato, carrot, country seasoning and 1 tsp olive oil in a bowl, season with pepper, then toss to coat. Put the vegetables on the lined tray and bake for 25-30 mins until golden and tender.
  2. Step 2 — Cook apple
    While the chips are baking, coarsely grate the apple. Heat 2 tsp olive oil in a medium frypan over medium heat. Cook the apple, stirring regularly, for 5-6 mins until very soft.
  3. Step 3 — Add pulled pork
    Add 2 tsp sugar and 2 tsp white wine vinegar to the apple and cook, stirring regularly, for a further 2-3 mins until golden and caramelised. Add the pulled pork and cook, stirring occasionally, for 5 mins or until hot.
  4. Step 4 — Toast rolls
    Meanwhile, halve the rolls through the middle. Put on an oven tray, cut-side up, and bake for 6 mins or until lightly toasted.
  5. Step 5 — Dress salad leaves
    Combine 1 tsp white wine vinegar and 1 tsp extra virgin olive oil in a large bowl and season with salt and pepper. Add the salad leaves and toss to coat.
  6. Step 6 — Get ready to serve
    Divide the pork mixture and some of the dressed salad leaves among the roll bases, then sandwich with the roll tops. Serve the pulled pork rolls with the chips and remaining salad leaves.
