Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork.
Step 2 — Prep ingredients
Meanwhile, shred the carrot using a julienne peeler or coarsely grate with a box grater. Trim the stems from the snow peas, removing the strings from one side, then halve on an angle. Thinly slice the spring onion, keeping the white and green parts separate. Crush or finely chop 2 garlic cloves. Reserve 1 tbs pineapple juice, then drain the pineapple pieces.
Step 3 — Cook omelette
Whisk 2 eggs in a bowl. Heat 2 tsp vegetable oil in a medium deep frypan over medium-high heat. Add the egg and swirl to coat the base of the pan. Cook for 1-2 mins until just set, then loosely roll up the omelette in the pan. Remove from the pan and cool slightly, then cut into strips. Reserve the pan.
Step 4 — Cook prawns and veggies
Combine the oyster sauce, reserved pineapple juice and 2 tsp soy sauce in a bowl. Heat 2 tsp vegetable oil in the reserved pan over high heat. Add the prawns and garlic, season with salt and pepper and cook, stirring, for 1-2 mins until the prawns are just cooked. Remove from the pan.
Step 5 — Stir-fry rice
Heat 2 tsp vegetable oil in the pan over high heat and stir-fry the carrot, snow peas and white part of the spring onion for 2 mins or until tender. Add the rice and stir-fry for 1 min. Stir in the prawns, pineapple and oyster sauce mixture and stir-fry for 1 min or until the prawns are cooked through. Remove the pan from the heat.
Step 6 — Serve up
Divide the fried rice among bowls, scatter over the omelette and remaining spring onion and enjoy!
