Bring a small saucepan of water to the boil for the eggs. Crush or finely chop the garlic. Cut the white part of the spring onion into 3cm lengths and thinly slice the green stem. Halve the carrot lengthwise, then thinly slice on an angle. Coarsely chop the broccoli stem, then cut the head into small florets. Cut the cabbage into 2cm chunks.
Step 2 — Make stir-fry sauce
Put the chilli paste, sesame oil, half the garlic, 1 tbs water, 3 tsp soy sauce, 2 tsp white vinegar and 1 tsp honey in a bowl and stir to combine.
Step 3 — Cook eggs
Cook 2 eggs in the pan of boiling water for 6 mins for soft-boiled, or 8 mins for hard-boiled. Drain, then cool in cold water. Peel and halve the eggs.
Step 4 — Season and stir-fry beef
DOUBLE THE BEEF STIR-FRY Meanwhile, separate the beef stir-fry into a bowl. Add remaining garlic and 1 tsp soy sauce, season with pepper and stir to coat. Heat 1 tbs oil in a large deep frypan over high heat until very hot (fast and hot cooking is key to a great stir-fry). Stir-fry the beef, in batches, for 1-2 mins until browned. Remove from the pan. Wipe the pan clean.
Step 5 — Stir-fry vegetables
Heat 2 tsp oil in the same pan over high heat. Stir-fry the white part of the spring onion, carrot and broccoli stems for 1 min. Add the broccoli florets and cabbage and stir-fry for 2-3 mins until lightly charred. Add 2 tbs water and cook, covered, for 2-3 mins until the vegetables are just tender (see cooking tip).
Step 6 — Get ready to serve
Add the stir-fry sauce and beef and any resting juices to the vegetables and cook, stirring, for 1 min or until combined and the sauce is reduced. Remove from the heat. Divide the stir-fry and egg among bowls. Scatter with the sesame seeds and remaining spring onion to serve.
