Check your avocado is ripe before starting this recipe (see Kitchen hack). Preheat the oven to 200C, fan-forced. Line 2 oven trays with baking paper. Finely chop the capsicum and tomato. Thinly slice the spring onion. Crush ½ garlic clove*. Finely grate the zest of half the lime, then juice the half. Cut the remaining half into wedges.
Step 2 — Cook beef
Combine the Tex-Mex seasoning and 2 tsp olive oil in a large bowl. Season with salt and pepper. Add the beef and turn to coat. Heat a medium frypan over high heat until hot. Cook the beef, turning regularly, for 2 mins or until browned. Transfer to a lined tray and roast for 14-16 mins for medium-rare, or until cooked to your liking. Remove from the oven and rest for 10 mins.
Step 3 — Make salsa and crema
Meanwhile, combine the lime zest, juice, 2 tsp olive oil and 1 tsp red wine vinegar in a large bowl and season with salt and pepper. Add the capsicum, tomato and spring onion and toss to combine. Mash the avocado in a separate bowl until smooth. Stir in the garlic and 1 tbs mayonnaise, then season with salt and pepper.
Step 4 — Toast bread
Cut the bread on an angle into 1cm-thick slices. Put on the remaining lined tray, drizzle with 2 tsp olive oil and season with salt and pepper. Bake for 5 mins or until golden.
Step 5 — Serve up
Thinly slice the beef. Divide the beef, salsa, avocado crema and bread among plates. Serve with the lime wedges and enjoy!
Step 6 — Kitchen hack
To speed up the ripening process, put the avocado in a paper bag and close loosely, then leave on the kitchen bench for a day or two. Add a banana to the bag to make the avocado ripen faster.
