Ingredients

  • 1pcs potato
  • 1pcs zucchini
  • 1bunch parsley
  • 200g peeled prawns
  • 10g pepper and garlic seasoning
  • 150g peas
  • 1pcs garlic bread
  • 20g butter
  • 15ml olive oil
  • 60ml (¼ cup) milk

Method

  1. Step 1 — Prep ingredients
    Cut the unpeeled potato into 2cm chunks. Thinly slice the zucchini. Finely chop the parsley leaves and stems, keeping them separate.
  2. Step 2 — Pan-fry prawns
    Put the prawns and 1½ tsp pepper and garlic seasoning (see Make it milder) in a bowl, season with salt and toss to combine. Melt 20g butter in a medium deep frypan over high heat. Cook the prawns, stirring, for 2-3 mins until just cooked through. Remove from the pan.
  3. Step 3 — Start braise
    Heat 1 tbs olive oil in the same pan over medium-high heat. Cook the potato, stirring occasionally, for 5-6 mins until golden. Add the zucchini, parsley stems and 1½ tsp pepper and garlic seasoning and cook, stirring, for 3-4 mins until the zucchini is tender. While the veggies are cooking, preheat the grill to high. Line an oven tray with foil.
  4. Step 4 — Simmer braise
    Add the peas, 60ml (¼ cup) milk and 60ml (¼ cup) water to the potato mixture and stir to combine. Reduce the heat to medium and cook for 3-4 mins until the peas and potato are tender. Add the prawns and cook, stirring, for 1 min or until warmed through. Remove from the heat. Taste, then season with salt.
  5. Step 5 — Grill bread and serve up
    Meanwhile, put the garlic bread on the lined tray, butter-side up, and grill for 3 mins, then turn over and grill for a further 2 mins or until golden and crunchy. Divide the prawn and potato braise among bowls, scatter with the parsley leaves and serve with the garlic bread. Or, pop everything on the table for everyone to help themselves. Enjoy!
  6. Step 6 — Make it milder
    Our pepper and garlic seasoning has a mild peppery kick, so reduce the amount on the prawns (Step 2) and in the braise (Step 3) if you prefer less heat.
