10g smoky barbecue seasoning
300g lean beef mince
50g tomato paste
20ml worcestershire sauce
150g peas
15ml olive oil
Method
Step 1 — Bake wedges
Preheat the oven to 220C, fan-forced. Line an oven tray with baking paper. Cut the unpeeled potatoes into 2cm-thick wedges and put on the lined tray. Drizzle with 2 tsp olive oil, season with salt and pepper and toss to coat. Bake for 20 mins or until golden and tender.
Step 2 — Prep vegetables
While the wedges are baking, finely chop the onion and carrot. Quarter the zucchini lengthwise, then thinly slice. Crush or finely chop the garlic. Coarsely grate the parmesan.
Step 3 — Brown beef
Heat 2 tsp olive oil in a medium deep frypan over medium-high heat. Add the onion, carrot, garlic and barbecue seasoning, season with pepper and cook, stirring regularly, for 4-5 mins until softened. Add the beef mince and cook, breaking up the lumps with a spoon, for 4-5 mins until browned.
Step 4 — Cook mince mixture
Stir the tomato paste, worcestershire sauce and 125ml (½ cup) water into the beef mixture and bring to a simmer. Reduce the heat to medium-low and cook, covered, for 5 mins. Stir in the zucchini and cook, covered, for a further 4-5 mins until the zucchini is tender and the sauce is slightly thickened.
Step 5 — Add parmesan
While the beef mixture is cooking, bring a small saucepan of water to the boil for the peas. Scatter half the parmesan over the potato wedges and bake for a further 4-5 mins until the parmesan is melted.
Step 6 — Get ready to serve
Meanwhile, add the peas to the pan of boiling water. Return to the boil and cook for 1 min. Drain. Stir the peas into the mince mixture and remove from the heat. Taste, then season with salt and pepper. Divide the potato wedges and savoury mince among plates and scatter over the remaining parmesan to serve.
