Preheat the oven to 220C, fan-forced. Line 2 oven trays with baking paper. Cut the unpeeled sweet potatoes into 2cm chunks. Put on the lined tray, drizzle with 2 tsp olive oil, season with salt and pepper and toss to coat.
Step 2 — Crumb chicken
Whisk 2 eggs in a shallow bowl (see Make it yours). Put the breadcrumbs in a separate shallow bowl. Combine 3 tsp pepper and garlic seasoning and 1 tbs plain flour in a third shallow bowl and season with salt. Dust the chicken wings with the seasoned flour, shake off the excess, then dip in the egg and coat in the breadcrumbs.
Step 3 — Roast chicken and potato
Put the chicken wings on the remaining lined tray and spray with olive oil. Roast the chicken wings on the lower oven shelf and the sweet potato on the upper shelf for 20 mins or until the chicken wings are cooked through and the sweet potato is tender.
Step 4 — Dress spinach
Meanwhile, combine 2 tsp olive oil and 1 tsp red wine vinegar in a large bowl and season with salt and pepper. Add the spinach and toss to coat.
Step 5 — Serve up
Divide the chicken wings, sweet potato gems and spinach among plates. Serve with the ranch dressing for dipping and enjoy!

Don't feel like crumbing your chicken wings? Combine 3 tsp pepper and garlic seasoning and 1 tbs olive oil in a large bowl and season with salt. Add the chicken wings and toss to coat, then put on the lined tray and bake as instructed. ~ Our pepper and garlic seasoning has a mild peppery kick, so reduce the amount if you prefer less heat.
