Ingredients

  • 250g cherry tomatoes
  • 1clove garlic
  • 50g parmesan
  • 200g shell pasta
  • 200ml coconut milk
  • 50g hummus
  • 50g baby spinach leaves
  • 300g chicken thigh fillets
  • 15ml olive oil
  • 5ml balsamic vinegar

Method

  1. Step 1 — Prep ingredients
    Preheat the oven to 220C, fan-forced. Bring a medium saucepan of salted water to the boil for the pasta. Lightly grease a 1.25L (5 cup) baking dish. Halve the tomatoes. Crush or finely chop 1 garlic clove. Coarsely grate the parmesan.
  2. Step 2 — Roast tomatoes
    Put the tomatoes, garlic, 2 tsp olive oil and 1 tsp balsamic vinegar in the baking dish. Season with salt and pepper and stir to combine. Roast the tomatoes for 10 mins or until blistered and starting to break down.
  3. Step 3 — Cook pasta
    While the tomatoes are roasting, cook the pasta in the pan of boiling water for 11 mins or until al dente. Drain, then return to the pan. Add the coconut milk, hummus (see Did you know?), spinach and half the parmesan and stir to combine. Taste, then season with salt and pepper.
  4. Step 4 — Assemble and bake pasta
    Add the pasta mixture to the roasted tomatoes in the baking dish and stir to combine. Scatter over the remaining parmesan and bake for 10 mins or until golden. Meanwhile, heat 2 tsp olive oil in a medium frypan over medium-high heat. Cook the chicken for 5-6 mins each side until browned and cooked through. Remove from the pan.
  5. Step 5 — Serve up
    Thickly slice the chicken. Divide the pasta bake and chicken among bowls and enjoy!
