Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins.
Step 2 — Prep ingredients
Meanwhile, thinly slice the broccoli stem, then cut the head into small florets. Thinly slice the capsicum. Crush or finely chop the garlic. Thinly slice the spring onion on an angle. Coarsely chop the peanuts.
Step 3 — Make sauce
Put the sesame oil, 2 tbs water, 1½ tbs soy sauce, 2 tsp sugar, 2 tsp white vinegar and 1 tbs honey in a jug or bowl and stir to combine.
Step 4 — Stir-fry beef
BEEF STIR-FRY OPTION Separate the beef stir-fry into a large bowl. Add the cornflour, season with salt and pepper and toss to coat. Heat 1 tbs oil in a large deep frypan over high heat until very hot (fast and hot cooking is key to a great stir-fry). Stir-fry the beef for 1-2 mins until browned. Remove from the pan.
Step 5 — Stir-fry vegetables
Heat 2 tsp oil in the same pan over high heat. Stir-fry the broccoli and capsicum for 3-4 mins until just tender (if needed, carefully add 2 tbs water while stir-frying to help the vegetables cook without burning, or without needing to add more oil). Add the garlic and spring onion and stir-fry for 30 secs.
Step 6 — Get ready to serve
Add the beef and any resting juices, sauce and sesame seeds to the vegetables. Cook, stirring, for 2 mins or until the sauce is slightly thickened. Fluff the rice with a fork. Divide the rice and stir-fry among bowls. Scatter with the peanuts to serve.
