Ingredients

  • 200g cabbage
  • 1pcs spring onion
  • 5g toasted sesame seeds
  • 150g egg noodles
  • 100g smoked salmon slices
  • 75g tonkatsu sauce
  • 30ml mayonnaise
  • 5ml white vinegar
  • 2pcs egg
  • 30ml vegetable oil

Method

  1. Step 1 — Prep ingredients
    Bring a medium saucepan of water to the boil for the noodles. Thinly slice the cabbage using a sharp knife or mandoline. Thinly slice the spring onion on an angle. Combine 2 tbs mayonnaise, 1 tsp white vinegar and 2 tsp water in a large bowl and season with salt and pepper. Add the cabbage and sesame seeds and toss to coat.
  2. Step 2 — Cook noodles
    Cook the noodles in the pan of boiling water for 2 mins or until tender. Drain, then rinse under hot water to prevent the noodles from sticking.
  3. Step 3 — Prep noodle mixture
    Whisk 2 eggs in a large bowl and season with salt and pepper. Add the noodles and 2 tbs water and toss to combine.
  4. Step 4 — Cook noodle pancake
    Heat 1 tbs vegetable oil in a medium frypan over medium-high heat. Put the noodle mixture in the pan, pressing down with a spatula to flatten. Cook for 4-5 mins each side (taking care when flipping over) until golden and the egg is set.
  5. Step 5 — Serve up
    Separate the smoked salmon slices, then coarsely tear into pieces. Top the noodle pancake with the salmon, drizzle over the tonkatsu sauce and scatter with the spring onion. Cut into wedges, serve with the slaw and enjoy!
  6. Step 6 — Make it yours
    We have suggested making 1 large noodle pancake, however feel free to make smaller ones instead! Just adjust the quantity of oil and cooking times.
