Finely chop the tomato. Cut the onion and capsicum into 2cm chunks. Thinly slice the spring onion. Pick the coriander leaves and finely chop the stems.
Step 2 — Make tomato salsa
Combine the tomato and 1½ tsp red wine vinegar in a bowl and season with salt and pepper.
Step 3 — Char flatbreads
Heat a large frypan over medium-high heat. Warm the tortillas, two at a time, for 30 secs-1 min each side until heated through and slightly charred. Remove from the pan and cover with a clean tea towel to keep warm.
Step 4 — Char vegetables
Meanwhile, heat 2 tsp olive oil in a medium frypan over high heat. Cook the onion and capsicum, without stirring, for 2-3 mins until blistered and charred. Season with salt and pepper. Cook, stirring, for a further 1-2 mins until tender. Remove from the pan.
Step 5 — Brown lamb mince
Heat 1 tsp olive oil in the same pan over medium-high heat. Cook the lamb mince, breaking up the lumps with a spoon, for 3-4 mins until browned.
Step 6 — Season lamb and serve
Add the barbecue sauce, barbecue seasoning and coriander stems to the lamb and cook, stirring, for 1 min or until combined. Taste, then season with salt and pepper. Divide the vegetables, lamb and tomato salsa among bowls. Scatter over the spring onion and coriander leaves. Serve with the charred flatbreads.
