Finely chop the capsicum. Thinly slice spring onion. Crush or finely chop the garlic. Crumble 1 stock cube* into a heatproof jug. Add half the tomato paste*, 125ml (½ cup) boiling water and a pinch of sugar and stir to dissolve.
Step 2 — Make slaw
Combine the aioli and 2 tsp red wine vinegar in a large bowl and season with salt and pepper. Finely shred the cabbage with a sharp knife or mandoline. Shred the carrot using a julienne peeler or coarsely grate with a box grater. Add the cabbage, carrot and half the spring onion to the aioli and stir to combine.
Step 3 — Cook pork
Heat 2 tsp olive oil in a medium deep frypan over high heat. Separate the pork stir-fry and season with salt and pepper. Cook the pork, stirring regularly, for 2-3 mins until browned and cooked through. Remove from the pan.
Step 4 — Start sauce
Heat 1 tbs olive oil in the same pan over medium heat. Cook the capsicum and remaining spring onion, stirring, for 2-3 mins until tender. Add the garlic and 2 tsp Spanish seasoning* and cook, stirring, for 1 min or until fragrant.
Step 5 — Finish sauce
Stir the tomato stock into the capsicum mixture and bring to a simmer. Cook, stirring occasionally, for 3-4 mins until the sauce is reduced. Add the pork and any resting juices to the sauce and stir for 1 min or until heated through. Taste, then season with salt and pepper.
Step 6 — Warm tortillas and serve
Meanwhile, put the tortillas on a plate, slightly overlapping, and microwave for 30 secs or until heated through (see cooking tip). Divide the tortillas among plates. Fill with the pork mixture and slaw to serve.
