Ingredients

  • 150g red cabbage
  • 1pcs carrot
  • 1pcs onion
  • 10g smoky barbecue seasoning
  • 200g pulled pork
  • 2pcs milk buns
  • 30ml mayonnaise
  • 35g (¼ cup) plain flour
  • 60ml (¼ cup) milk
  • 10ml white wine vinegar
  • 38ml vegetable oil

Method

  1. Step 1 — Prep ingredients
    Thinly slice the cabbage with a sharp knife or mandoline (see Cooking tip). Shred the carrot using a julienne peeler or coarsely grate with a box grater. Thinly slice the onion into rounds, then separate into rings. Put 2 tbs mayonnaise and 1 tsp barbecue seasoning in a bowl, season with salt and pepper and combine.
  2. Step 2 — Warm pork
    Put the pulled pork in a small frypan over medium heat. Cook, stirring occasionally, for 5 mins or until warmed through. Add the remaining barbecue seasoning and cook for 1 min or until fragrant. Season with pepper, then remove the pan from the heat. Preheat the grill to high.
  3. Step 3 — Cook onion rings
    Combine 35g (¼ cup) plain flour, 60ml (¼ cup) milk, 1 tsp white wine vinegar and a pinch of salt in a shallow bowl (see Make it faster). Heat 2 tbs vegetable oil in a medium frypan over medium-high heat. Dip the onion rings, one at a time, into the batter, then add to the pan. Cook, in batches, for 1-2 mins each side until golden. Remove from pan and drain on paper towel.
  4. Step 4 — Toast buns and make slaw
    Halve the buns. Put on an oven tray, cut-side up, and grill for 1-2 mins until lightly toasted. Combine 2 tsp vegetable oil and 1 tsp white wine vinegar in a large bowl and season with salt and pepper. Add the cabbage and carrot and toss to combine.
  5. Step 5 — Serve up
    Spread the bun bases and tops with the barbecue mayo. Layer with the pulled pork, slaw and some of the onion rings. Sandwich with the bun tops and serve with the remaining onion rings. Enjoy!
  6. Step 6 — Make it faster
    Running short of time? Instead of tossing the onion rings in batter, simply cook them in oil for 3-4 mins until softened, then serve in the burger instead of on the side.
