Ingredients

  • 200g pulled pork
  • 10g Chinese barbecue seasoning
  • 40g kecap manis
  • 250g microwave basmati rice
  • 200g stir-fry mix
  • 20g roasted peanuts
  • 2pcs egg
  • 23ml vegetable oil

Method

  1. Step 1 — Make omelette
    Crack 2 eggs (see Make it yours) into a bowl, season with salt and pepper and whisk to combine. Heat a drizzle of vegetable oil in a large deep frypan over medium-high heat. Add the egg mixture and swirl to coat the base of the pan. Cook for 1-2 mins until just set. Remove from the pan.
  2. Step 2 — Warm pulled pork
    Heat a drizzle of vegetable oil in the same pan over high heat. Add the pork, Chinese barbecue seasoning, half the kecap manis and 1 tbs water and cook, stirring, for 3 mins or until warmed through. Remove from the pan.
  3. Step 3 — Make fried rice
    Massage the packet of rice to loosen. Heat a drizzle of vegetable oil in the same pan over high heat. Cook the vegetable mix, stirring regularly, for 2 mins or until slightly softened. Add the rice and 1 tbs water and cook, stirring, for 2-3 mins until warmed through.
  4. Step 4 — Add pork
    Add the pork mixture to the rice and stir until combined and warmed through. Remove the pan from the heat. Taste, then season with salt and pepper.
  5. Step 5 — Serve up
    Coarsely tear the omelette and gently stir through the fried rice. Divide the fried rice among plates, drizzle with the remaining kecap manis, scatter with the peanuts and enjoy!
  6. Step 6 — Make it yours
    Prefer your eggs fried? Add the eggs to the pan and cook for 3-4 mins until just set or cooked to your liking.
