Ingredients

  • 250g butternut pumpkin
  • 1pcs onion
  • 1bunch oregano
  • 1pcs diced bacon
  • 400g can cherry tomatoes
  • 10g pepper and garlic seasoning
  • 50g tomato paste
  • 325g pumpkin and cashew ravioli
  • 15ml olive oil
  • 60ml (¼ cup) plant-based milk

Method

  1. Step 1 — Prep ingredients
    Peel the pumpkin and cut into 2cm chunks. Finely chop the onion. Pick the oregano leaves, discarding the stems. Put the pumpkin and 1 tbs water in a microwave-safe bowl, cover and microwave for 5 mins or until tender (see Cooking tip).
  2. Step 2 — Cook bacon and onion
    Meanwhile, bring a large saucepan of salted water to the boil for the ravioli. Heat a generous drizzle of olive oil in a medium saucepan over medium heat. Cook the bacon, stirring, for 4-5 mins until crisp. Remove from the pan. Add the onion to the pan and cook, stirring, for 3-4 mins until softened.
  3. Step 3 — Make sauce
    Increase the heat to medium-high and add the tomatoes, pumpkin, half the oregano, 3 tsp pepper and garlic seasoning (see Kitchen notes), 60ml (¼ cup) plant-based milk and 1 tbs tomato paste* to the onion. Cook, stirring, for 1 min or until combined. Remove from the heat. Blend the tomato mixture with a stick blender or food processor until smooth (see Kitchen notes).
  4. Step 4 — Cook ravioli
    Cook the ravioli in the pan of boiling water for 3 mins or until al dente. Drain. Add the ravioli and bacon to the sauce and gently stir over medium heat until the ravioli is coated and the sauce is warmed through. Remove the pan from the heat. Taste, then season with salt and pepper.
  5. Step 5 — Serve up
    Divide the ravioli among bowls and scatter over the remaining oregano. Enjoy!
  6. Step 6 — Kitchen notes
    Our pepper and garlic seasoning has a mild peppery kick, so reduce the amount if you prefer less heat. ~ If you don't have a stick blender or food processor, mash the tomato mixture with a potato masher. The result won't be as smooth but it will be just as delicious!
