Ingredients

  • 300g corn kernels
  • 200g pulled pork
  • 10g Aussie barbecue seasoning
  • 4pcs pita breads
  • 50g tomato paste
  • 50g baby spinach leaves
  • 30ml barbecue sauce
  • 1pcs olive oil spray (optional)
  • 5ml olive oil
  • 3ml white wine vinegar

Method

  1. Step 1 — Prep ingredients
    Preheat the oven to 220C, fan-forced. Line a large oven tray with baking paper. Drain and rinse the corn.
  2. Step 2 — Warm pulled pork
    Put the pulled pork in a small frypan over medium heat. Cook, stirring occasionally, for 3 mins. Add the corn, barbecue seasoning and 1 tbs barbecue sauce and cook, stirring, for 2 mins or until fragrant and warmed through. Remove the pan from the heat. Taste, then season with salt and pepper.
  3. Step 3 — Bake pizzas
    Put 2 pita* on the lined tray and spray or brush with olive oil. Spread with 2 tbs tomato paste and top with the pulled pork. Bake the pizzas for 8-10 mins until the bases are crisp.
  4. Step 4 — Make spinach salad
    Meanwhile, combine 1 tsp olive oil and ½ tsp white wine vinegar in a large bowl and season with salt and pepper. Add three-quarters of the spinach and toss to combine (see Make it yours).
  5. Step 5 — Serve up
    Drizzle 1 tbs barbecue sauce over the pizzas and scatter over the remaining spinach. Cut the pizzas into wedges and serve with the spinach salad. Enjoy!
