Check your avocado is ripe before starting this recipe (see Kitchen hack). Fill a medium saucepan three-quarters full with water and bring to the boil for the rice. Pick the coriander leaves and finely chop the stems. Finely chop the capsicum and tomato.
Step 2 — Make coriander rice
Cook the rice in the pan of boiling water for 12 mins or until tender. Drain and return to the pan. Add the coriander stems, season with salt and pepper and stir to combine.
Step 3 — Make salsa
Meanwhile, combine 1 tbs white wine vinegar and 2 tsp sugar in a large bowl and season with salt and pepper. Add the capsicum and tomato and toss to combine.
Step 4 — Warm pork
Put the pulled pork and half the Tex-Mex seasoning in a small frypan over medium heat. Cook, stirring occasionally, for 5 mins or until warmed through.
Step 5 — Serve up
Thinly slice the avocado. Divide the rice, pork, avocado and salsa among bowls. Top with the coriander leaves and scatter over the remaining Tex-Mex seasoning. Enjoy!
Step 6 — Kitchen hack
To speed up the ripening process, put the avocado in a paper bag with a banana and close loosely, then leave on the kitchen bench for a day or two.
