Ingredients

  • 1clove garlic
  • 400g cannellini beans
  • 1pcs diced bacon
  • 400g diced tomatoes
  • 10g smoky barbecue seasoning
  • 1pcs sourdough baby baguette
  • 50g mixed salad leaves
  • 23ml olive oil
  • 15ml barbecue sauce
  • 3ml sugar
  • 10ml mayonnaise
  • 5ml red or white wine vinegar

Method

  1. Step 1 — Cook bacon
    Preheat the grill to high. Crush or finely chop 1 garlic clove. Drain and rinse the beans. Heat 2 tsp olive oil in a medium deep frypan over medium-high heat. Cook the bacon, stirring, for 4-5 mins until browned.
  2. Step 2 — Simmer beans
    Add the beans, tomatoes, barbecue seasoning, 1 tbs barbecue sauce and ½ sugar to the bacon and stir to combine. Bring to the boil, then reduce the heat to medium and cook, stirring occasionally, for 4 mins or until slightly thickened. Remove the pan from the heat. Taste, then season with pepper (see Kitchen 101).
  3. Step 3 — Grill garlic bread
    Meanwhile, combine the garlic and 1 tbs olive oil in a bowl and season with salt and pepper. Cut the baguette in half and brush the cut sides with the garlic oil. Put on an oven tray, cut side up, and grill for 2-3 mins until lightly toasted.
  4. Step 4 — Dress salad leaves
    Put 2 tsp mayonnaise and 1 tsp red wine vinegar in a large bowl, season with salt and pepper and whisk to combine. Add the salad leaves and toss to coat.
  5. Step 5 — Serve up
    Divide the bacon beans, garlic bread and salad leaves among bowls. Enjoy!

    The bacon provides enough saltiness for the bean mixture so there's no need to season it with salt.
