Finely chop the onion and capsicum. Thinly slice the jalapeno. Crush or finely chop 2 garlic cloves. Combine 1 tbs white vinegar and 1 tsp sugar in a bowl and season with salt and pepper. Add the onion and capsicum and stir to combine.
Step 2 — Cook lamb mince
Heat a drizzle of olive oil in a medium deep frypan over high heat. Cook the lamb mince, breaking up the lumps with a spoon, for 3-4 mins until browned. Remove with a slotted spoon and wipe the pan clean. Return the lamb to the pan, add the garlic, Tex-Mex seasoning and 2 tbs water and cook over medium-high heat for 3 mins or until slightly thickened. Remove from the heat.
Step 3 — Make cowboy candy
Meanwhile, put 1 tbs white vinegar and 3 tsp sugar in a small saucepan and stir to combine. Cook over medium-high heat, stirring, for 4-5 mins until golden and the sugar is dissolved. Stir in the jalapeno (see Kitchen 101), then remove from the heat.
Step 4 — Warm tortillas
Put the tortillas on a plate, slightly overlapping, and microwave for 30 secs or until warmed through (see Cooking tip).
Step 5 — Serve up
Spread the tortillas with the mayonnaise and top with the mince mixture, salsa and cowboy candy. Enjoy!

Cowboy candy is another name for candied jalapeno. The chilli has a mild heat, so if someone in your household prefers no spice, serve the cowboy candy at the table instead.
