Thinly slice the onion and capsicum. Finely grate the zest of half the lime, then juice the half. Cut the remaining lime into wedges.
Step 2 — Cook pork
Combine the Tex-Mex seasoning, 2 tsp lime juice, 1 tbs olive oil and 1 tsp sugar in a large bowl and season with salt and pepper. Separate the pork stir-fry into the marinade and toss to coat. Heat a medium frypan over high heat. Add the pork and cook, stirring, for 2-3 mins until cooked through. Remove from the pan.
Step 3 — Soften veggies
Heat a drizzle of olive oil in the same pan over medium heat. Cook the onion and capsicum, stirring, for 3-4 mins until softened. Add the pork and 60ml (¼ cup) water and cook, stirring, for 2-3 mins until the liquid is slightly reduced. Remove the pan from the heat.
Step 4 — Warm tortillas
Put the tortillas on a plate, slightly overlapping, and microwave for 30 secs or until warmed through (see Kitchen 101).
Step 5 — Serve up
Combine the lime zest and 2 tbs mayonnaise in a bowl and season with salt and pepper. Divide the tortillas among plates and top with the pork mixture and lime mayo. Serve with the lime wedges and enjoy!

Don't have a microwave? You can warm the tortillas, wrapped in foil, in a 220C (fan-forced) oven for 8 mins or until warmed through.
