Bring a medium saucepan of salted water to the boil for the pasta. Crush or finely chop the garlic.
Step 2 — Cook pasta
Cook the pasta in the pan of boiling water for 10 mins or until al dente. Reserve 2 tbs cooking water, then drain the pasta.
Step 3 — Brown beef mince
Meanwhile, heat a drizzle of olive oil in a medium deep frypan over high heat. Cook the beef mince, breaking up the lumps with a spoon, for 3-4 mins until browned.
Step 4 — Simmer sauce
Add the garlic and Tuscan seasoning to the mince and cook, stirring, for 30 secs or until fragrant. Stir in the tomato paste, half the tomato puree*, 1 tsp sugar and 125 ml (½ cup) water and bring to a simmer. Reduce the heat to medium and cook, covered, for 3-4 mins until the sauce is thickened.
Step 5 — Serve up
Stir the spinach and pasta into the sauce. Gradually add the reserved cooking water, stirring constantly, until the sauce coats the pasta and looks slightly glossy. Taste, then season with salt and pepper. Divide the pasta among bowls. Drizzle with the red pesto and enjoy!
Step 6 — Make it yours
Cheese and pasta are a match made in heaven. If you have any on hand, grate some cheddar or parmesan over the penne before serving.
