Preheat the oven to 220C, fan-forced. Coarsely chop the tomato. Crush or finely chop 2 garlic cloves.
Step 2 — Brown pork mince
Heat a drizzle of olive oil in a medium deep frypan over medium-high heat. Cook the pork mince, breaking up the lumps with a spoon, for 3-4 mins until browned.
Step 3 — Simmer sauce
Add the tomato, garlic, Tuscan seasoning and tomato paste to the mince and cook, stirring, for 1 min or until fragrant. Stir in 125ml (½ cup) boiling water and ½ tsp sugar and bring to the boil. Reduce the heat to medium and cook for 3-4 mins until slightly reduced.
Step 4 — Bake garlic bread
While the sauce is simmering, put the garlic bread on an oven tray, butter-side up, and bake for 6 mins or until golden and crunchy. Cut in half on an angle.
Step 5 — Warm pasta and serve up
Massage the packet of pasta to loosen and tear a 2cm opening for the steam to escape. Heat in the microwave for 90 secs or until warmed through. Add the pasta and spinach to the pork mixture and stir to combine. Taste, then season with salt and pepper. Divide the pasta and garlic bread among bowls and enjoy!
Step 6 — Make it yours
Cheese and pasta are a match made in heaven. If you have any on hand, grate some cheddar or parmesan over the penne before serving.
