Preheat the oven to 200C, fan-forced. Line 2 oven trays with baking paper. Thickly slice the carrots on an angle. Put the chicken wings and carrot on the lined trays and season with salt and pepper. Roast, turning the chicken wings and carrot and swapping the trays halfway, for 20 mins (see Kitchen 101).
Step 2 — Make sauce
Meanwhile, pick the coriander leaves and finely chop the stems. Combine the coriander stems, chipotle, 1 tbs vegetable oil, 2 tsp soy sauce, 2 tsp white vinegar and 3 tsp honey in a bowl and season with salt and pepper.
Step 3 — Cook rice
Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork.
Step 4 — Caramelise chicken wings
When the chicken wings and carrot have been roasting for 20 mins, remove from the oven and pour off any tray juices. Increase the oven temperature to 220C. Drizzle the chicken and carrot with the sauce mixture and toss to coat. Roast for a further 8-10 mins until the chicken wings are caramelised and cooked through.
Step 5 — Serve up
Divide the rice and chicken wings and carrot among plates. Scatter with the coriander leaves and serve with the chipotle mayonnaise. Enjoy!
Step 6 — Kitchen 101
Roasted meats release lots of delicious juices, which can be used to give a meal extra flavour. If you have time, hold off starting the rice until the chicken has been cooking for 20 mins, then reserve the tray juices and add them to the rice before cooking. They'll give the rice a delicate chicken flavour.
