Rinse the rice until the water runs clear. Put in a medium saucepan with 450ml water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins.
Step 2 — Prep ingredients
Meanwhile, if adding the eggs, bring a small saucepan of water to the boil. Crush or finely chop the garlic. Thinly slice the capsicums. Trim the lettuce, then separate the leaves. Put the garlic, three-quarters of the chilli paste, 3 tsp soy sauce, 1 tsp sugar and 2 tbs water in a bowl and whisk until combined.
Step 3 — Boil eggs
Cook 2 eggs in the pan of boiling water for 6 mins for soft-boiled, or 8 mins for hard-boiled. Drain, then cool in cold water. Combine the remaining chilli paste and 60ml (¼ cup) mayonnaise in a bowl.
Step 4 — Cook pork mince
While the eggs are cooking, heat 1 tbs vegetable oil in a large frypan over high heat. Cook the pork mince and capsicum, breaking up the lumps with a spoon, for 4 mins or until the mince is browned. Reduce the heat to medium, cover and cook, stirring occasionally, for 3-4 mins until the capsicum is softened.
Step 5 — Finish mince and serve up
Stir the garlic-chilli mixture into the mince mixture. Increase the heat to high and bring to a simmer. Cook, uncovered, stirring, for 1 min or until combined. Remove the pan from the heat. Peel and quarter the eggs. Put the mince mixture, egg, rice, lettuce leaves, chilli mayo and sesame seeds in separate dishes and let everyone serve themselves. Enjoy!
Step 6 — Make it yours
Prefer this as a salad? Simply shred the lettuce and put in a large bowl, then top with the mince mixture, egg and sesame seeds. Serve with the rice and chilli mayo.
