Bring a medium saucepan of water to the boil for the noodles. Halve the carrot and zucchini lengthwise, then thinly slice on an angle. Thinly slice the capsicum. Crush or finely chop the garlic. Thinly slice the spring onion.
Step 2 — Make sauce
Put the oyster sauce, sambal oelek (reduce for less of a chilli kick), sesame oil, 1 tbs soy sauce, 1 tbs water, 2 tsp white vinegar and 2 tsp honey in a bowl and whisk to combine.
Step 3 — Brown beef mince
Heat 1 tsp oil in a large deep frypan over high heat. Cook the beef mince, breaking up the lumps with a spoon, for 3-4 mins until browned. Remove from the pan.
Step 4 — Stir-fry vegetables
Heat 2 tsp oil in the same pan over high heat. Stir-fry the carrot and capsicum for 3-4 mins until softened. Add the zucchini and garlic and stir-fry for 2 mins or until the vegetables are tender.
Step 5 — Cook noodles
Meanwhile, cook the noodles in the pan of boiling water for 2 mins or until tender. Drain, then rinse under hot water to prevent the noodles from sticking.
Step 6 — Get ready to serve
Add the mince and any resting juices to the vegetables. Add the sauce and cook, stirring, for 1 min or until the sauce is slightly thickened. Add the noodles and toss to coat. Divide the noodle stir-fry among bowls and scatter with the spring onion to serve.
