Ingredients

  • 1pcs carrot
  • 1pcs small sweet potato
  • 1pcs spring onion
  • 4pcs pork and fennel sausages
  • 150g arborio rice
  • 5g Cajun seasoning
  • 50g tomato paste
  • 20ml worcestershire sauce
  • 23ml olive oil
  • 500ml (2 cups) boiling water

Method

  1. Step 1 — Prep ingredients
    Halve the carrot lengthwise and thinly slice. Peel the sweet potato and finely chop. Thinly slice the spring onion, keeping the white and green parts separate. Thinly slice the sausages.
  2. Step 2 — Fry sausage
    Heat 2 tsp olive oil in a medium deep frypan over medium-high heat. Cook the sausage, stirring occasionally, for 4-5 mins until browned. Remove from the pan with a slotted spoon and drain on paper towel.
  3. Step 3 — Cook veggies
    Heat 1 tbs olive oil in a medium saucepan over medium heat. Cook the carrot, sweet potato and white part of the spring onion, stirring occasionally, for 5 mins or until the veggies are slightly softened. Add the sausage, rice, Cajun seasoning and half the tomato paste* and cook, stirring, for 1-2 mins until the grains are coated.
  4. Step 4 — Cook rice
    Add 500ml (2 cups) boiling water to the rice mixture. Reduce the heat to low and cook, covered, for 20 mins or until most of the liquid is absorbed and the rice is almost tender. Remove the pan from the heat and stir in 2 tsp worcestershire sauce*. Cover and stand for 5 mins. Taste, then season with salt and pepper.
  5. Step 5 — Serve up
    Divide the sausage rice among bowls, scatter with the remaining spring onion and enjoy!
