Preheat the oven to 220C, fan-forced. Line 2 oven trays with baking paper. Bring a medium saucepan of water to the boil for the noodles. Shred the carrot using a julienne peeler or coarsely grate with a box grater. Finely grate the zest of half the lime, then juice the half. Cut the remaining lime into wedges.
Step 2 — Brown pork
Drizzle the pork with 2 tsp vegetable oil and season with salt and pepper. Heat a large frypan over high heat. Cook the pork, turning, for 4 mins or until browned. Transfer the pork to a lined tray. Scatter over the Balinese seasoning and turn to coat. Roast on the upper oven shelf for 11-13 mins until cooked to your liking. Remove from the oven and rest for 5 mins.
Step 3 — Cook noodles and cashews
Meanwhile, cook the noodles in the pan of boiling water for 3 mins or until tender. Drain, then rinse under cold water to cool. Spread the cashews in a single layer over the remaining tray. Drizzle with 2 tsp honey, season with salt and stir to coat (see Make it spicy). Bake on the lower shelf for 3-4 mins until golden.
Step 4 — Make noodle salad
Pick the coriander leaves and finely chop the stems. Put the lime zest, 2 tsp lime juice, 1 tbs vegetable oil, 2 tsp soy sauce and 2 tsp honey in a large bowl, season with pepper and stir to combine. Add the carrot, noodles and coriander stems and toss to coat.
Step 5 — Serve up
Thinly slice the pork. Divide the noodle salad and pork among bowls. Drizzle with any remaining dressing from the noodle salad and the resting juices from the pork. Scatter over the coriander leaves and candied cashews and serve with the lime wedges. Enjoy!
