Preheat the grill to high. Line an oven tray with foil. Finely chop the onion. Peel the potato and cut into 1cm chunks. Crush or finely chop 2 garlic cloves. Thinly slice the chorizo into rounds. Pick the mint leaves, discarding the stems. Crumble the stock cubes into a heatproof jug, add 375ml (1½ cups) boiling water and stir to dissolve.
Step 2 — Cook soup
Put the chorizo in a cold medium frypan over medium-high heat and cook, turning, for 4-5 mins until golden. Remove the chorizo. Heat 3 tsp olive oil in the pan over medium heat. Cook the onion and half the garlic, stirring, for 3-4 mins until softened.
Step 3 — Blend soup
Add the potato, stock and 60ml (¼ cup) milk to the soup and bring to the boil. Reduce the heat to medium and cook for 8 mins or until the potato is tender. Add the peas and mint and bring to the boil. Cook for 2 mins or until the peas are tender. Remove the pan from the heat.
Step 4 — Grill toasts
Meanwhile, cut the bread rolls in half. Combine the remaining garlic and 3 tsp olive oil in a bowl. Brush the cut sides of the bread with the garlic oil. Put on the lined tray, cut-side up, and grill for 2-3 mins until lightly toasted. Spread the toasts with half the goat cheese* and drizzle with 1 tsp honey.
Step 5 — Serve up
Blend the soup with a stick blender until smooth (see Kitchen 101). Taste, then season with salt and pepper. Divide the soup among bowls, scatter with the chorizo and serve with the goat cheese toasts. Enjoy!
Step 6 — Kitchen 101
Take care when blending the hot soup, as it may spit. If using a blender jug or food processor, remove the centre lid or pusher to allow the steam to escape, then hold the lid securely in place and use a tea towel to protect your hands from the heat. Don't overfill the jug – blend in batches if necessary.
