Ingredients

  • 150g jasmine rice
  • 150g green beans
  • 1pcs carrot
  • 40ml sweet chilli sauce
  • 300g chicken tenderloins
  • 10g toasted sesame seeds
  • 30ml tomato sauce
  • 15ml soy sauce
  • 30ml mayonnaise
  • 10ml vegetable oil

Method

  1. Step 1 — Cook rice
    Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork.
  2. Step 2 — Prep veggies
    Meanwhile, bring a medium saucepan of water to the boil for the veggies. Trim the beans. Thinly slice the carrot on an angle.
  3. Step 3 — Make sauce
    Combine the sweet chilli sauce (see Make it milder), 2 tbs tomato sauce and 3 tsp soy sauce in a bowl and season with pepper. Transfer half the sauce mixture to a separate bowl and stir in 2 tbs mayonnaise. Reserve the remaining sauce mixture.
  4. Step 4 — Cook chicken
    Season the chicken with salt and pepper. Heat 2 tsp vegetable oil in a medium frypan over medium-high heat. Cook the chicken for 3-4 mins each side until browned and cooked through. Add the reserved sauce mixture and cook, stirring, for 30 secs or until the chicken is well coated. Remove the pan from the heat.
  5. Step 5 — Cook veggies and serve up
    While the chicken is cooking, add the beans and carrot to the pan of boiling water and cook for 3 mins or until tender. Drain. Season with salt and pepper. Divide the rice, sweet chilli chicken and veggies among bowls. Scatter with the sesame seeds and drizzle with the mayonnaise mixture. Enjoy!
  6. Step 6 — Make it milder
    The sweet chilli sauce has a very mild kick. We've suggested this amount for flavour, but if you prefer less heat or have little ones, reduce to taste.
