Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 10 mins, then add the peas and cook for a further 2 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork.
Step 2 — Prep ingredients
Meanwhile, finely chop the carrot. Thinly slice the spring onion. Thinly slice the chicken. If using, crack 2 eggs (see Make it yours) into a bowl, season with salt and pepper and whisk to combine. Put the teriyaki sauce, 2 tsp soy sauce and ½ tsp honey in a separate bowl and whisk to combine.
Step 3 — Cook omelette
Heat 2 tsp vegetable oil in a medium deep frypan over medium-high heat. Add the egg mixture and swirl to coat the base of the pan. Cook for 2 mins or until just set, then loosely roll up the omelette in the pan. Remove from the pan and cool slightly, then cut into strips.
Step 4 — Stir-fry chicken
Heat 1 tbs vegetable oil in the same pan over high heat. Stir-fry the chicken for 2-3 mins until browned. Remove from the pan and reduce the heat to medium. Stir-fry the carrot and spring onion for 3-4 mins until tender.
Step 5 — Serve up
Add the chicken, teriyaki sauce mixture and rice and peas to the veggies and stir-fry for 2 mins or until combined and warmed through. Remove the pan from the heat. Taste, then season with salt and pepper. Divide the fried rice among bowls, top with the omelette strips and enjoy!
Step 6 — Make it yours
Prefer your eggs fried? Heat a little olive oil in a frypan over medium heat. Crack the eggs into the pan and cook for 3-4 mins until just set or cooked to your liking, then serve on top of the fried rice.
