Preheat the oven to 220C, fan-forced. Line an oven tray with baking paper. Cut the unpeeled potatoes into 1.5cm-thick wedges. Combine ½ tsp barbecue seasoning and 2 tsp olive oil in a large bowl and season with salt and pepper. Add the potato and toss to coat. Put on the lined tray and roast for 20-25 mins until golden and tender.
Step 2 — Prep ingredients
Meanwhile, thinly slice the cabbage with a sharp knife or mandoline. Thinly slice half the onion, then finely chop the remaining onion. Put the chicken flat on a board, put your hand on top and halve horizontally into fillets. Combine 1½ tsp barbecue seasoning and 1 tbs plain flour in a shallow bowl. Add the chicken and turn to coat. Reserve the remaining flour mixture in bowl.
Step 3 — Cook chicken and onion
Heat 1 tbs olive oil in a medium frypan over medium-high heat. Cook the chicken for 3-4 mins each side until browned and cooked through. Remove from the pan. Heat 2 tsp olive oil in the same pan over medium heat. Add the sliced onion and cook, stirring occasionally, for 3 mins or until softened.
Step 4 — Simmer onion sauce
Add the remaining barbecue seasoning and reserved flour mixture to the onion and cook, stirring constantly, for 1 min. Add 180ml (¾ cup) water and 2 tbs milk and bring to the boil. Reduce the heat to medium and cook, stirring occasionally, for 4-5 mins until slightly reduced. Remove the pan from the heat. Taste, then season with salt and pepper.
Step 5 — Serve up
Meanwhile, cut the apple into matchsticks (see Kitchen hack). Put the apple, cabbage, chopped onion and 2 tsp white wine vinegar in a bowl, season with salt and pepper and toss to combine. Divide the chicken, potato wedges and apple salad among plates. Pour the onion sauce over the chicken and enjoy!
