Ingredients

  • 1pcs pak choy
  • 1pcs carrot
  • 75g tonkatsu sauce
  • 200g plain tofu
  • 2pcs milk buns
  • 10g fried shallots
  • 10ml honey
  • 15ml vegetable oil
  • 30ml mayonnaise
  • 10ml white vinegar

Method

  1. Step 1 — Prep ingredients
    Preheat the grill to high. Thinly slice the pak choy with a sharp knife. Shred the carrot using a julienne peeler or coarsely grate with a box grater. Combine half the tonkatsu sauce*, 2 tsp honey and 1 tbs water in a bowl.
  2. Step 2 — Warm tofu
    Heat 1 tbs vegetable oil in a medium frypan over medium heat. Cook the tofu for 2 mins each side. Add the tonkatsu mixture and cook, turning, for a further 2 mins or until the tofu is well coated. Remove the pan from the heat.
  3. Step 3 — Toast buns
    Meanwhile, cut the buns in half. Put on an oven tray, cut-side up, and grill for 2-3 mins until lightly toasted.
  4. Step 4 — Make slaw
    Combine 2 tbs mayonnaise and 2 tsp white vinegar in a large bowl. Add the pak choy, carrot and fried shallots, season with salt and pepper and toss to combine.
  5. Step 5 — Serve up
    Layer the bun bases with the slaw and glazed tofu, then sandwich with the tops. Divide the burgers and remaining slaw among plates and enjoy!
