Ingredients

  • 1pcs lemon
  • 2pcs potato
  • 10g Greek seasoning
  • 1pcs Lebanese cucumber
  • 1clove garlic
  • 1pcs cos lettuce
  • 1pcs tomato
  • 1pcs red onion
  • 250g lamb mince
  • 20g panko breadcrumbs
  • 2pcs milk buns
  • 30g pitted kalamata olives
  • 130g natural yoghurt
  • 50g feta
  • 15ml olive oil
  • 1ml sugar
  • 1pcs egg
  • 10ml extra virgin olive oil

Method

  1. Step 1 — Bake fries
    Preheat oven to 220C, fan-forced. Line an oven tray with baking paper. Finely grate ½ tsp lemon zest* and juice lemon. Cut unpeeled potatoes into 1.5cm-thick fries. Put on the lined tray, drizzle with 1 tbs lemon juice and 2 tsp olive oil. Scatter with half the Greek seasoning, season with salt and pepper and toss to coat. Bake for 25 mins or until golden and tender.
  2. Step 2 — Prep ingredients
    Meanwhile, coarsely grate half the cucumber, then put in a sieve over a bowl to drain. Coarsely chop remaining cucumber. Crush or finely chop the garlic. Trim the lettuce, then coarsely chop. Slice the tomato and onion. Combine the onion, remaining lemon juice and ¼ tsp sugar in a large bowl. Set aside to pickle, tossing occasionally, until needed.
  3. Step 3 — Make patties
    Put the lamb mince, breadcrumbs, garlic, lemon zest, remaining Greek seasoning and 1 egg in a large bowl and season with salt and pepper. Using damp hands, combine well, then shape into 2 equal patties, slightly larger than the base of a bun.
  4. Step 4 — Cook patties, toast buns
    Heat 2 tsp olive oil in a medium frypan over medium-high heat. Cook the patties for 3 mins each side or until cooked through. Remove from the pan and keep warm. Meanwhile, halve the buns through the middle. Put on an oven tray, cut-side up, and bake for 5 mins or until toasted.
  5. Step 5 — Make salad
    While the buns are toasting, add the chopped cucumber, lettuce, olives and 2 tsp extra virgin olive oil to the pickled onion, season with salt and pepper and toss to combine.
  6. Step 6 — Assemble and serve
    For the tzatziki, squeeze excess liquid from the cucumber. Combine the yoghurt and cucumber in a bowl and season with salt and pepper. Crumble the feta over the fries. Spread some of the tzatziki on the buns, then fill with the patties, tomato and some of the salad. Serve the burgers with the feta fries, remaining salad and remaining tzatziki.
