Trim the lettuce, then shred the leaves. Coarsely chop the cucumber. Finely chop the dill, including the stems. Pick the mint leaves, discarding the stems. To make the yoghurt sauce, finely chop the garlic, then using the flat side of the knife, mash to a paste (see cooking tip). Combine the garlic and yoghurt in a bowl and season with salt.
Step 2 — Make sumac onion
Thinly slice half the onion and finely chop the remaining half. Combine ½ tsp sumac, 2 tsp red wine vinegar, ½ tsp sugar and a pinch of salt in a bowl. Add the sliced onion and toss to coat. Set aside to pickle, tossing occasionally, until needed.
Step 3 — Make koftas
Put the lamb mince, breadcrumbs, chopped onion, remaining sumac, half the lemon myrtle seasoning and 1 egg in a large bowl and season with salt and pepper. Using damp hands, combine well, then shape into 6 oval-shaped koftas.
Step 4 — Cook koftas
Heat 2 tsp olive oil in a medium frypan over medium heat. Cook the koftas, turning regularly, for 10 mins or until browned and cooked through.
Step 5 — Make dukkah and salad
Meanwhile, combine the dukkah and remaining lemon myrtle seasoning in a bowl. Combine 1 tbs olive oil and 2 tsp red wine vinegar in a large bowl and season with salt and pepper. Add the lettuce, cucumber and dill and toss to combine.
Step 6 — Warm pita and serve
Halve the pita, then put on a plate, slightly overlapping, and microwave for 30 secs or until warmed through. Divide the koftas, yoghurt sauce and sumac onion among plates. Scatter over the lemony dukkah and mint. Serve with the salad and pita. Or serve it all mezze-style for everyone to help themselves.
