Peel the potatoes and cut into 4cm chunks. Thinly slice the capsicum. Crush or finely chop the garlic. Trim the beans. Finely grate the parmesan. Put the chicken flat on a board, put your hand on top and halve horizontally into fillets. Combine the country seasoning and 1 tsp olive oil in a large bowl and season with pepper. Add the chicken and turn to coat.
Step 2 — Infuse milk
Put half the thyme and 60ml (¼ cup) milk in a medium saucepan over medium heat. Bring to a simmer for 1 min, then transfer to a bowl and set aside to infuse. Discard the thyme before adding the infused milk to the potato (see cooking tip).
Step 3 — Make mash
Put the potato and remaining thyme in the same pan, cover with cold salted water and bring to the boil. Reduce the heat to medium and cook for 14 mins or until tender. Drain and return to the pan. Discard the thyme. Mash the potato until smooth. Add 10g butter and the infused milk, season with salt and pepper and stir to combine. Cover to keep warm.
Step 4 — Cook chicken and capsicum
Meanwhile, heat a medium deep frypan over medium-high heat. Cook the chicken, turning regularly, for 4-8 mins until golden and cooked through. Remove from the pan. Heat 1 tsp olive oil in the pan over medium-high heat. Cook the capsicum, stirring, for 4-5 mins until softened. Bring a small saucepan of water to the boil for the beans.
Step 5 — Simmer sauce
Add the garlic and a pinch of chilli flakes* (use more or less to taste) to the capsicum and cook for 30 secs or until fragrant. Stir in the red pesto, three-quarters of the cream* and 2 tbs water. Bring to a simmer, then reduce the heat to medium and cook for 3-4 mins until slightly reduced.
Step 6 — Cook beans and serve
While the sauce is simmering, cook the beans in the pan of boiling water for 3 mins or until tender. Drain. Stir the spinach into the sauce and cook for 1 min or until wilted. Return the chicken to the pan and turn to coat in the sauce. Taste, then season with salt and pepper. Divide the chicken, mash and beans among plates. Scatter with the parmesan to serve.
