Preheat the oven to 220C, fan-forced. Line a large oven tray with baking paper. Thinly slice the onion. Combine ½ tsp umami seasoning (see Did you know?), 2 tbs mayonnaise and 3 tsp water in a bowl. Taste, then season with salt and pepper.
Step 2 — Heat pork
Heat 2 tsp olive oil in a medium frypan over medium heat. Cook the pulled pork, stirring occasionally, for 4-5 mins until warmed through. Add 2 tsp umami seasoning* and cook, stirring, for 30 secs or until fragrant. Taste, then season with salt and pepper. Remove from the pan.
Step 3 — Caramelise onion
Heat 2 tsp olive oil in the same pan over medium heat. Cook the onion, stirring, for 5 mins or until soft. Add 2 tsp balsamic vinegar and 1 tsp sugar and cook, stirring, for 1 min or until caramelised. Remove the pan from the heat.
Step 4 — Bake pizzas
Put 2 pitas* on the lined tray and spread with the tomato paste. Top with half the spinach, then the caramelised onion and pork. Scatter over the cheese. Bake for 8-10 mins until the bases are crisp and the cheese is melted.
Step 5 — Serve up
Cut the pizzas into wedges, top with the remaining spinach, drizzle with the mayonnaise mixture and enjoy!
