Bring a large saucepan of water to the boil for the noodles. Crush or finely chop the garlic. Halve the carrots lengthwise, then thinly slice on an angle. Pick the coriander leaves, then finely chop the stems. Quarter the pak choy lengthwise. Thinly slice the chicken.
Step 2 — Start pho
Heat 1 tsp vegetable oil in a large saucepan over medium-high heat. Cook the garlic, carrot and coriander stems, stirring, for 2 mins or until fragrant. Add the Vietnamese pho seasoning, 2 tsp soy sauce, 1 tsp sugar and 1.25L (5 cups) water and bring to a gentle simmer.
Step 3 — Cook chicken and pak choy
Add the chicken and cook for 3-4 mins. Add the pak choy and cook for 2-3 mins until the chicken is cooked through and the pak choy is tender, remove the pan from the heat. Taste, then season with salt and pepper.
Step 4 — Cook noodles
Meanwhile, cook the noodles in the pan of boiling water for 7 mins or until tender. Drain, then rinse under hot water to prevent the noodles from sticking.
Step 5 — Serve up
Divide the noodles and chicken pho among bowls. Drizzle with the sriracha sauce (see Make it milder) and scatter with the coriander leaves. Enjoy!
Step 6 — Make it milder
Sriracha is a Thai hot chilli sauce. If you prefer less heat, use only a very light drizzle, or serve at the table for those who do like a kick of heat.
