Ingredients

  • 2pcs zucchini
  • 1pcs lemon
  • 50g parmesan
  • 40g panko breadcrumbs
  • 250g spaghetti
  • 1pcs vegetable stock cubes
  • 10g Italian seasoning
  • 23ml olive oil

Method

  1. Step 1 — Prep ingredients
    Bring a medium saucepan of salted water to the boil for the spaghetti. Cut the zucchini into 1cm-thick rounds. Finely grate the zest of half the lemon, then juice the half. Cut the remaining lemon into wedges. Finely grate the parmesan.
  2. Step 2 — Make lemon crumbs
    Heat 2 tsp olive oil in a large deep frypan over medium-high heat. Cook the breadcrumbs, stirring, for 3-4 mins until golden. Transfer to a bowl, add the lemon zest, season with salt and pepper and stir to combine. Reserve the pan.
  3. Step 3 — Cook pasta
    Add three-quarters of the spaghetti* (see Did you know?) to the pan of boiling water and cook, stirring occasionally, for 12 mins or until al dente. Reserve 125ml (½ cup) cooking water, then drain. Crumble 1 stock cube* into the reserved cooking water and stir to dissolve.
  4. Step 4 — Cook zucchini
    Meanwhile, heat 1 tbs olive oil in the reserved pan over medium-high heat. Cook the zucchini for 5-6 mins each side until browned and tender. Reduce the heat to medium. Add the Italian seasoning and stock, then coarsely mash the zucchini. Cook, stirring, for 1-2 mins until slightly thickened.
  5. Step 5 — Serve up
    Add the spaghetti to the zucchini mixture and toss to combine. Remove the pan from the heat. Stir in three-quarters of the parmesan and 2 tsp lemon juice*. Taste, then season with salt and pepper. Divide the zucchini pasta among bowls, then scatter with the lemon crumbs and remaining parmesan. Serve with the lemon wedges and enjoy!
